4 easy tray bake dinner recipes! I've recently bought a copy of The Roasting Tin which is a fantastic cook book with so many meal ideas for the family. In fact I loved it so much I picked up copy of the follow-up book too which looks at recipes from around the world! I've used a couple of recipes from the book along with two other brilliant one dish dinners. Tomato and cheese pasta bake: 🤍 My recipe for shepherd's pie: Brown 500g lamb mince in a pan with some olive oil. Add chopped veg (one carrot, one onion, one stick celery) and fry together for around 5 mins. Add two cloves of garlic and stir. Then tip in 2 tins of chopped tomatoes, a dash of Worcestershire sauce, and a squeeze of tomato puree. Simmer for 20 mins while you cook potatoes for the mash. Mash your potatoes with a generous knob of butter and around 50ml of milk (you may need a little more to get the texture right). Pour the lamb into your roasting tray, then top with your potatoes. Honey spiced chicken is a superb combination of boneless, skinless chicken breasts cut in half and sliced into strips. They are combined with salt, pepper, an egg, and some corn starch The sauce is made from garlic, chili sauce, and honey, . As they can been done so quickly, they made a fantastic midweek meal. I especially enjoy chicken with some spices and sweetness. Just plain chicken with salt and pepper is just way too boring form me. Then, I got thinking about a chicken dish with an element of sweetness and a tad of spice. Yes, a sweet and sour chicken. Then it came to mind that a chicken dish with some honey and chilli sauce might fit the bill. Thus, my honey spicy chicken was born. It has to be one of the nicest dishes I have ever put together. Hot & Sour Stir Fry: 🤍 This vegan chili paneer is a cracking midweek meal; ready in under 30 minutes, it delivers a flavourful punch and tons of glorious textures. After finding some vegan paneer, I realised I had no idea what to do with it. Twitter answered my call, and suggested I try out a favoured Indian snack/street food; chili paneer. After looking a a few recipes online, I knew it would be ideal to try out. Lots of crunchy veggies go really well with the soft texture of the paneer. I baked a garlic naan and had the paneer and sabudana khichdi on top, as a flatbread. Absolute bliss!
